Smoked Trout Appetizers Recipe

Delicate and milder than smoked salmon, smoked trout makes a light and refreshing crowd-pleasing start to a meal. Our smoked trout cups are filled with buttery smoked trout, fresh herbs, smooth creme fraiche and the lightest touch of Dijon mustard.

Smoked Trout Appetizers Recipe

  • 5 washed red peppers
  • 1 large cucumber diced
  • 1 medium red onion peeled and finely chopped
  • 4 tbsp. lemon juice
  • 3 tsp. Dijon mustard
  • 14 oz. smoked trout
  • 7 oz. crème fraiche
  • 1 tbsp. fresh dill chopped
  • 8 small pieces of dill leaves
  • 8 dessert glasses

  1. Heat the oven to 350°F.
  2. Arrange the whole red peppers in a large roasting pan. Bake at 350 for 45 minutes, until they’re golden, turning over once. Remove and allow to cool down.
  3. Remove the skin and seeds, and cube. In a large bowl, mix with the cucumber, onion, and 2 tablespoons of lemon juice and reserve.
  4. Cut the smoked trout into small pieces.
  5. Place 1 tsp. of mustard at the bottom of each glass, then layer with the red pepper mix and arrange a few pieces of smoked trout. Drizzle the remaining lemon juice over each glass.
  6. Mix the crème fraiche with the chopped dill, and finish each class with a dollop, and garnish with sprigs of dill.
